Gourmet Restaurant In the Gard countryside, between Alès and Bagnols-sur-Cèze, you'd think you were in the South, and time flows slowly. This former 17th-century stagecoach relay now lends its beautiful white stone to a contemporary, uncluttered establishment, where guests come to eat as much as enjoy the rooms, swimming pool and beautiful gardens. In the kitchen, chef Cédric Douchin, who has worked with the likes of Frédéric Anton and Christian Constant, develops well-mastered Provençal flavors in a contemporary, slightly fusion vein, such as sea bass tartar with mango, ginger, lemongrass and mint, filet of lean beef with hummus, eggplant and tomato coulis, entrecôte de taureau with piperade and jus corsé, or a chocolate mousse dome with cocoa cookie and creamy avocado.
