A quarter of a century later, Frédéric Anton reigns over Paris through three iconic venues: the Eiffel Tower with the Jules Verne restaurant, the Don Juan II yacht moored on Quai Debilly, which offers the capital's most gastronomic Seine promenade, and the Pré Catelan in the Bois de Boulogne, which takes you back to the days of horse-drawn carriages for eternally charming 5-toque meals in an incredible setting. "It's true that, apart from regular refreshments, it hasn't changed in seventeen years!But it's part of the soul of the place, and as long as I'm here, it'll be my decor. "

And this is set to continue, as a new creation has just appeared opposite the restaurant: La Ferme du Pré, a recreation of a farmhouse where Frédéric Anton has assembled a host of objects from the attics of the Pré Catelan, including silverware, serving trolleys, brassware and bells. The decor is magnificent for what will become the most popular bistro in the Bois. "I wanted to end up an innkeeper," laughs the chef, who adds with a twinkle in his eye: "I've got four atypical places in Paris, but they seem to me to represent the eternal Paris as we imagine it." A tribute to this Lorraine native who grew up near Contrexéville and rose through the ranks as Joël Robuchon's most gifted lieutenant before conquering Paris .
