Restaurant Director of the Year 2026: Fanny Perrot crowned by Gault&Millau

Fanny Perrot, Restaurant Director at Alléno Paris - Pavillon Ledoyen (5 toques) in the 8ᵉ arrondissement of Paris, is the winner of the Restaurant Director of the Year 2026 trophy, which she took home this Monday, November 17, 2025.

The chef d'orchestre of restaurant Alléno Paris was awarded the distinction of Directrice de Salle de l'Année 2026 at the annual Gault&Millau ceremony held at the Maison de la Mutualité in Paris on Monday November 17. This category rewards those who coordinate the organization of the dining room, between elegance and precision. Three other talents were nominated for this award: Nicolas Hoarau of the restaurant Jardin des Sens in Montpellier, Christophe Rohat of L'Astrance in Paris and Guillaume Anglade of Restaurant des Rois in Beaulieu-sur-Mer.

Smiling as she took to the stage, Fanny Perrot declared: "I'm very happy. A big thank you to Gault&Millau and Monsieur Esquerré. Marc Esquerré and I have known each other for several years now. I'd already won a prize when I was a little baby, and now I've grown up, but it's still very emotional. We always try to do our best for our guests, thank you all.Keep up the good work, I'm very touched."

A deeply human Front of House Manager

Originally from Besançon, Fanny Perrot discovered her passion for hospitality at an early age, and began her career at the Chalet du Mont d'Arbois.Arbois, then on the shores of Lake Annecy with Yoann Conte, where her talent and commitment led her to the 2019 Gault&Millau Young Restaurant Manager title.

After a spell at 1947 Cheval Blanc in Courchevel (5 toques), in 2023 she joined the Alléno Paris restaurant at Pavillon Ledoyen, which she now manages with her characteristic elegance and attention to detail. Fanny embodies a vision of service that is demanding, warm and deeply human. She is the precise link between service and table, and between dining room and kitchen.
