Find out more about this ambitious young woman.Born in Besançon in 1993, Fanny Perrot knew from an early age that she wanted to work in the world of hospitality. "When I was a child, I took piano lessons and, on the way home, my mother would sometimes take me to the tea room. It was a secret, privileged moment that made me want to repeat the dream later on", she recalls. Born into a farming family, she grew up in the Jura region before entering the restaurant business.
Her first experiences took her to the Chalet du Mont d'Arbois in Megève, under Julien Gatillon, and for a season in England, between Manchester and Liverpool. In 2017, she joined the Yoann Conte house (5 toques) in Haute-Savoie as chef de rang. It was supposed to be a seasonal experience, but it was extended: at the end of the winter, the chef offered her a position as assistant maître d'. She then climbed the ladder at great speed, until she became a room manager. i didn't feel ready at first," she says, "but it all came naturally." In 2018, she was named Best Young Restaurant Manager by Gault&Millau, an accolade that solidified her ascent.
Alléno Paris, the culmination of her career
After a season at 1947 in Courchevel (5 toques) with Yannick Alléno, followed by a summer at the Auberge de Montmin (3 toques), Fanny Perrot returned to Courchevel to confirm her position. In May 2023, she took the next step by joining Alléno Paris - Pavillon Ledoyen (5 toques). A few months later, in September, the restructuring of the teams propelled her to the position of Restaurant Manager.
Today, she is the embodiment of elegance and attentiveness in the service of the house. "What setsus apart is our table concierge service. We contact each guest before they come, and take the time to understand their expectations and desires. it takes a lot of effort, but it allows us to adapt our service and avoid unforeseen events," she points out. She and her team are committed to providing sincere, attentive and personalized service, in direct line with Yannick Alléno's cuisine.
