This native of Brest, who is slowly approaching his 50th birthday, quickly left his native region to settle in Haute-Savoie and train at the Thonon hotel school. With his passion for pastry-making, he turned to Marc Veyrat, already twice Chef of the Year at the time, in 1993. The great Marco was then at the height of his fame on the shores of Lake Annecy, at the helm of the Auberge de l'Éridan. The little assistant worked like a dog, learned fast and hard, and earned the respect of the chef in the hat, who, fifteen years later, thought of his former protégé to succeed him at the helm of Marc Veyrat's Nouvelle Maison. We sometimes had the impression that he was holding back at the stoves of the beautiful 1930s lavender-blue house, but in recent months we've found him transformed, as if the various confinements had allowed him to settle down and reflect not only on his dishes, but on the overall experience. Today, a trip to Yoann Conte's is a pure moment of grace, an exhilarating experience, pampered by magnificent service and supported by cuisine that is both pure and full of lightning flashes.
