The Pourcel brothers are the most modern and daring in the area, getting along as well as ever and running the only truly great restaurant in the département. While all the youngsters hide away in their small-scale models, with limited capacity, a skeleton staff and an offer limited to an imposed, secret menu, the Pourcel brothers open their hatches wide, welcome forty diners, and design a very large menu. This Jardin des Sens is a true house of pleasure, and in the vaulted dining room with its restored 17th-century frescoes, the atmosphere is as festive as ever. Their generosity sometimes goes so far as to give too much: appetizers, pre-desserts, various attentions, an extra raviole here, a side dish or sauce there, but really, who could complain? It's their style, their natural empathy, their pleasure in giving pleasure. This cuisine is like them, elaborate yet popular, more timeless than modern, ultimately very personal and, as such, not really comparable to the neighbor's dishes. And if the main thing is to have a great time, then the mission is more than accomplished. With the carabineros mango coconut emulsion and a good shellfish taco, the superb green asparagus and crunchy morel stuffed with morel cream, the monkfish squid clam artichoke with marinière, a very characteristic dish, joyful, seaworthy and generous, the sweetbreads and gamba with a simple jus, and the lovely desserts by the pastry chef, such as the raspberry sorbet poppy tartlet. The overall success is also, and to a large extent, due to the atmosphere and the team in the dining room, expertly and gently led by manager Nicolas Hoarau, to the cellar, which has always been able to showcase its region and its great winegrowers, and to a young, motivated and committed team, like Emma in the sommelier's office and Mélody in the dining room.
