This cuvée was disgorged in 2010. The nose seems discreet, reminiscent of encaustic. On the palate, bubbles caress and mushroom flavors accompany a saline, mineral framework. Aeration brings pleasant oxidation and the finish is pleasantly bitter. A champagne of finesse that develops its aromas with aeration. An unusual pairing with warm white asparagus with vanilla coconut milk.
