As delicious as ever, this cuvée seduces with its powdery universe and finely spiced touches of cardamom, coriander and Sichuan pepper. The fruitiness is full-bodied, tangy and greedy, cradled by extremely delicate bubbles. Its umami character will come to the fore in the next few years. We'd recommend it with a fine fillet of salmon cooked on one side, with a creamy shiso and soy sauce. Enjoy this superb vintage while it's still available.
