Led by Florian and Cindy—the fifth generation following Socrate, Sadi, Michel, Franck, and Christine—the Sadi Malot estate in Villers-Marmery is in good hands. Certified for organic viticulture with a strong commitment to transitioning toward biodynamics, the 70 plots—most of which face due east on chalky soils—are planted with 80% Chardonnay, a rarity in this part of the Montagne de Reims. The lineup is naturally dominated by 100% Chardonnay champagnes, but Pinot Noir also plays a role in the “blanc de noirs” cuvées marketed under the name Malot Villière.
