An exceptional vintage in Champagne. This cuvée is composed exclusively of Chardonnay from the Grands Crus of Champagne, 82% from the Côte des Blancs and 18% from the Montagne de Reims. The colour is intense gold with green undertones, and a creamy mousse that lasts a long time in the glass. The nose offers a pretty fruity palette, with aromas of citrus and white fruits, honeysuckle, hawthorn and almond paste upon aeration. The chalky minerality is omnipresent. Whipped cream on the attack with extra fine bubbles, this wine then delivers fruity flavors from the nose onto the palate with a hint of brioche, and vanilla on the finish. Grandiose! A nice match with sea bass “en papillote” baked in foil with melted fennel butter and crunchy spring vegetables.
