Delicate nose of acacia, lemon sorbet and dried verbena. Beautifully controlled effervescence. The mid-palate focuses on minerality, with notes of chalk and gunflint linked to the roundness of fresh almond and orange blossom. The fine tension of the dosage creates a sapid, digestible whole. Try with scallop yakitori with lemongrass.
