Subtle and racy are the hallmarks of this cuvée. The golden color has a persistent cordon, while the bubbles are fine and abundant. The flavor is majestically racy and complex, underpinned by a medley of stewed, honeyed and spicy white fruits. On the palate, the attack is frank, homogeneous, saline and of good length. This is followed by a more sustained, creamy, peppery chew, accompanied by pulpy, gourmet, mineral substance. This volume accentuates the richness of the taste. Enjoy with pigeon in crapaudine and duck foie gras.
