Ripe, almost stewed yellow fruits give roundness and deliciousness to a bouquet underlined by aromas of bread crust, fresh coffee and pastry notes of warm cookie and baked chouquettes. The nose retains a very pleasant, fleshy gourmand side. The palate is more marked by toasty notes, quickly overtaken by perfectly controlled acidity in a creamy, corseted texture with fine, pleasant bubbles. A light, salivating bitterness on the finish avoids heaviness and adds sapidity.
