The cork slipped out easily with a soft sigh, releasing an autumnal nose of sous bois, wild forest mushrooms and truffles, and later salted caramel. Fine crystalline bubbles and the mineral mousse still retain great energy. The palate is in extraordinary condition at nearly 20 years. Fresh and elegant notes continue from the nose now as silky smooth characters on the palate, deliciously concentrated with a perfectly judged extra brut dosage. It is hard to believe the silky white and yellow fruits and concentrated long lingering elegance are not from Chardonnay. A foraging in the forest dream perfect with risotto milanese, pasta, or any mushroom and truffle dish.

There are many Dumonts in the centre of the Côte des Bars, where this family has been growing vines for over two centuries. Certified Terra Vitis, the vineyard is composed of 25 hectares of vines in the village of Champignol-lez-Mondeville. The Kimmeridgian soil of this part of the Champagne region is particularly adapted to the culture of Pinot Noir, dominant at this domain.
