Although the appellation crémant no longer exists in Champagne, this cuvée has all the style of one. It is made from Chardonnay from vines over 90 years old. It is aged in our cellars for over 4 years. The result is a subtle, deep champagne. The color is a dashing pale gold with youthful green highlights. The nose is fine, with notes of citrus, hawthorn and brioche. The attack is creamy, slightly honeyed, enlivened by fine bubbles and a lovely acidic freshness on the finish. Minerality is omnipresent. Ideal as an aperitif or with cold fish and mayonnaise.
