A plot of Pinot Noir aged for 3 years in the cellar. On the nose, the vinosity and power of the grape variety are immediately apparent. On the palate, this power is tempered by a frank acidity that will mellow with time, all the more so as the whole is balanced by a thirst-quenching chalky minerality. It should be decanted for immediate consumption to soften its ardor! Enjoy it with andouillette de Troyes à la crème and moutarde de Meaux.
