Gault&Millau's review
The estate run by Claude Michez and his wife is located in Boursault, in the Marne valley. All cuvées from the 4.2 ha of vines are vintages from the Boursault terroir alone, vinified and aged for around ten months in barrel. The powerful style of these champagnes makes them the perfect companions for both fish and meat dishes. The estate is currently converting to organic farming and adheres to the Vignerons Indépendants charter, which means it vinifies only its own grapes and welcomes visitors. We're particularly partial to their "Cœur de Meunier" cuvée, which is unfailingly consistent.
