Half Pinot Noir, half Chardonnay for this champagne, which was aged for 5 years on lees before disgorging. After aeration, the woody notes fade, leaving the terroir and the harvest to express themselves through a subtle, rock-solid texture. The bubbles fade, giving way to a chalky, salivating texture. A wine that is more about finesse and texture than complexity, to be served with delicate dishes, such as scallop tartar and sliced fresh porcini mushrooms.
