Another nugget from the cellar of this passionate couple, who each year produce a particularly delicious cuvée. This 2007 vintage, aged 11 years on laths, is made exclusively from Chardonnay grapes grown in Mesnil-sur-Oger. A deep, intense wine where the bubbles are subtly outlined in a fresh, creamy texture. Touches of toasted almonds, pistachios and mirabelle plums in syrup incite greediness while weaving a streamlined acidity. Enjoy with creamy white meats, such as pan-fried sweetbreads with salted butter and fresh lemon balm.

Since 2000, Julie Médeville and her husband Xavier Gonet have looked after a 12-hectare vineyard with parcels spread over eight villages, including three Grand Crus (Le Mesnil-sur-Oger, Oger and Ambonnay) and five Premier Crus. Working the soil and using 100% organic fertilizers help preserve the terroir's distinctive character. The Gonet-Médevilles separate and vinify each of their parcels in old barrels, and block malolactic fermentation to enhance the ageing potential of their wines. The family also owns several châteaux in Bordeaux, which we highly recommend you discover.
