Over 11 years of ageing on lees for this 100% Ambonnay cuvée, with superb evolution right from the color. Every second in the glass, the nose evolves from stewed pear to undergrowth, from gentian to black bread. On the palate, the structure is phenomenal, without detracting from the final freshness. This great gastronomic wine is enough to convert even the most reluctant to drink champagne at the table, and will work wonders with a land-sea dish such as a black cod with trumpets of death.
