Salty notes reminiscent of white miso mark the first nose, before ripe white fruit and umeshu add their roundness. A very Japanese, salivating bouquet. Back to Champagne on the palate, with freshness and chalky notes. It's lively, all the more so as the bubbles titillate the palate before a salivating finish. A gastronomic Champagne that will do very well with Asian dishes (particularly grilled eel), echoing the nose, or more simply with some fine langoustines in carpaccio.
