Gault&Millau's review
This trading house, part of the UMC (Union des maisons de champagne), is located in the heart of the Champagne region, in Bouzy. It has linked its name to tradition, and in particular to the art of old-fashioned tying, which consists of holding the cork in place with two strings tied crosswise. Before the First World War, the cork was not held in place by a wire worm, but tied with a hemp string. This time-consuming and costly process (around 50 bottles an hour) dates back to the 18th century, and the company has remained faithful to it ever since. The wide range, made from vines grown on the Côte des Blancs and Montagne Sud regions, gives pride of place to prestige cuvées.
