A wine of tenebrous charm, peaty as a fireplace in a Loire château. The nose combines smoky wood, chalk, sea spray and eucalyptus in an almost mystical atmosphere. On the palate, the contrast is astonishing: a velvety, rich texture of coffee and dark chocolate. The well-dosed bubbles accompany a taut, saline finish with citrus accents. Still young, this champagne will gain in harmony with age. Serve with red meat for originality.

Cazé-Thibaut

Maison Cazé-Thibaut, located in the heart of the Marne Valley, has seen ten generations of winegrowers pass through its ranks. It was in 1953 that Roger Cazé created the Cazé champagne house and marketed his bottles for the first time. Today, Fabien carries on the tradition and works his vines organically, without herbicides or insecticides. The wines are aged in barrels before being bottled, and benefit from long ageing on fine lees.
