The bubbles are delicate for this cuvée combining the three main Champagne grape varieties. On the nose, floral notes emerge, while buttery aromas presage a silky mouthfeel. Fresh raspberry, plum and even a hint of smoky wood are also present. The palate, with its fine vinosity, is characterized by citrus fruits, then hazelnut and sweet spices, all underpinned by a delightful minty freshness. Enjoy with fresh turmeric and Parmesan shortbread.

Bourgeois Diaz
Jérôme Bourgeois-Diaz has presided over the estate's destiny since 2000. From a family that has been making champagne for four generations, he oversees almost 7 ha, including 3.5 ha of Pinot Meunier, 2.5 ha of Pinot Noir and 1 ha of Chardonnay. The plots, on predominantly clay-limestone soil, have an average age of 35 years and have been biodynamically farmed since 2009. Every precaution is taken to maximize the quality of the grapes, and the domaine's motto fits well with the wines we taste here: "Wine is not chemistry, but alchemy". Superb, they are vinified in stainless steel vats, oak barrels or clay and concrete vats, depending on the profile of each vintage.
