Original Restaurant Thierry Marx took charge of the Mandarin Oriental in 2010 and brought the colors of this magnificent hotel nestled in the heart of Paris to new heights, even flirting with the fifth toque a few years ago. In December 2023, our former Chef of the Year (at the time of Château Cordeillan-Bages, in 2006), announced that he was leaving the establishment to devote himself fully to Onor, the restaurant he opened in early 2023 in the 8th arrondissement, in place of the legendary Marée. No word yet on who will replace him in the kitchens of the Rue Saint-Honoré palace.
