Gastronomic ambitions have been scaled back in favor of a more inclusive, international hotel offering, which also has its advantages: flexibility, relaxed service and an à la carte choice to suit a variety of tastes: foie gras gelée passion, œuf parfait asperges morilles épinards sauce poulette, cabillaud osciètre tête de veau sauce gribiche, saddle of lamb panoufle confite... Prices remain high for a palatial clientele who appreciate the high standard of the welcome and general well-being. Desserts are unsurprising (cherry pie, saint-honoré), the wine cellar is suitable, and there are pleasant snacks on the side (dim sum, croque, César salad...). Nina Haradji, who trained at Passard and then with Thierry Marx at Sur Mesure, takes over from the chef. More on her later.
