Chef's Restaurant For the past twenty years, Stéphane Carbone has been inviting us to cross over to the other side of the marina, to find this slightly out-of-the-way restaurant, as if to remind us of its special status. The address has stood the test of time, always imposing itself as a benchmark, for its timeless, contemporary style, hushed for business meals and luminous so as never to appear to be hiding anything. Here, everything is transparent and obvious, reflecting a certain idea of cuisine, embodied as much in technique as in ideas, conveying a perfectly identified taste of the coast. These include mussels marinière, celery tagliatelle, parsley condiment, curried mussel cappuccino and potato crisp, snacked redfish fillet, vegetable millefeuille, pasta pearl, espuma hollandaise and herb tuile, or kidney with calvados cream, puff pastry, beet pulp, pan-fried mushrooms and raspberry mustard. Lunch menu €39 and lobster menu €125.
