Gourmet Restaurant A new page is being turned, and a new story is beginning, as Élodie and Grégoire James take over Pierre Lefebvre's restaurant. Having worked in the kitchens of the Lancaster in Paris, the chef has returned to his native land, paying homage to the Pays d'Auge in Augia. The decor, which was already tasteful, has not been touched up: a chic, Norman setting of large stones, parquet flooring and gray beams, light wood and a beautiful terrace in the heart of the pedestrian Vaugueux district, a stone's throw from the castle of William the Conqueror. The chef's focus is on locally-sourced, common-sense bistronomy, which appeals as much to tourists as to local regulars, who come for a lunch break or an evening family get-together. On the lunch menu, seasonal ideas, beautifully presented and reflecting true savoir-faire, an elegant salmon gravelax, shiso and cucumber, all texture and well-seasoned, hake fillet, eggplant caviar and piperade, beef carpaccio, pistachio pesto, pickled vegetables and apple waffles, poached peach and red fruit soup. The menu returns to its more regional roots, featuring trou normand and cochon de Bayeux. Set menu €25
