Chef's Restaurant Well established on the corner of Castellane, Julien Diaz has been reaping the rewards of his regularity over the past six years at the helm of this fine table, which is now one of the flagships of Marseille's new wave, cited everywhere. While he has kept his hidden menus for those who love surprises, he now offers, in addition to the €40 or €45 lunch menu, a fine menu to extract two menus at €90 and €115 depending on the number of courses. He deploys a remarkable technique, varied textures and flavors: fish marinated in immortelle transparency and bottarga, foie gras marinated in absinthe and carrot chutney, cuttlefish cooked in ink and sea fennel, and an impeccable hare à la royale in season. Squash for dessert, an atmosphere of well-informed connoisseurs, attentive service and a cellar that has expanded over the years, all at fair prices.
