Gourmet Restaurant Yannick Stein doesn't say much, but this quiet man, formerly of Lionel Lévy, has fun in the kitchen. He revisits soupe au pistou and pieds paquets, and hides sardines in a potato ravioli that he marries with a declination of peas and citrus fruit. He braises white asparagus with cinnamon, with a confit of raspberry, basil, harissa and bottarga petals. His terre-mer combines beef and hay-smoked mackerel on an arugula pesto, and braised pigeon unites with a crisp nori seaweed chard and roasted peach. For dessert, red fruit and rhubarb sablé with Timut pepper. All beautifully presented without a misstep. On the wine side, the maitre d'hôtel shares some interesting bottles: vinsobres nature domaine Chaume-Arnaud 2018 (8€ a glass) " hérault " kodjo fouzitou " de Nathalie Hérédia ; saint-péray " saute-mouton ") and the magnificent château Roquefort les Mûres 2015. If the evening menu raises the tone, the €25 lunch menu is a bargain. All the more so as meals are served on the huge terrace, which - on the other hand - could do with a more cheerful decor.
