Chef's Restaurant At lunchtime, Cédrat is for Maëlyss Vultaggio, the chef's partner, and her Mama Kyuna. In the evening, Éric Maillet stages a gastronomy forged at Gérald Passedat's. In the pretty veranda, with its Scandinavian leather and wood furniture and comfortable blue banquettes, you'll be pampered. If you're feeling chilly, we'll throw in a blanket. On the menu, a knife-cut muge taco with a spicy, crunchy red bean paste and, for freshness, a salsa verde with herbs and lime gel. We choose an interesting red "Boom 2021" from Roussillon (€8), the first vintage from a young winemaker, Damien Petitfils, to harmonize with a supreme of guinea fowl with seaweed butter, parsnips, reduced tamarind juice, tarragon and Italian breadcrumbs pangrattato with garlic and rosemary. For the finale, diced kiwi, green tea cream, dry meringue, puffed rice and matcha powder.
