Chef's Restaurant An attractive room, elegance, a focus on sourcing, precision and rarity in a world of art and culture, with a limited range of set menus and very few dishes, to accommodate a small number of guests in the best possible conditions. Five courses in the evening menu, with pretty plates: yellowtail with broad beans and lemongrass, white asparagus with peanuts and herbs, cuttlefish with black butter rice and saddle of lamb with mint peas, a sequence that's right up there with the times, right down to the tarragon kiwi panna cotta.
