Chef's Restaurant By opening here in 2016, Jean-François Piège was one of the first in Paris to bet on high-end cooking over the fire and on the grill. An immediate and well-deserved success from the outset, the cuisine features premium products and rare meats from the best breeds. Alas, the concept seems to be running out of steam, and apart from the fine-grained and fatty Baltic Black Beef rib, starters such as the red tuna cooked over an open fire and then cooled in a sweet and sour sauce, or the rather banal Corsican clementine soufflé tart didn't convince us, especially at these prices... Service is a bit slow, but the wine list is still excellent. The maestro's professionalism should help to redress the balance, especially as we're still just 2 toques away.
