Gourmet Restaurant Located in the heart of the peninsula, this 4-star hotel-spa boasts not only an exceptional setting - that of a splendid 16th-century manor house - but also a fine gourmet table designed by Martial Berge. The chef is a passionate advocate of local flavors, betting on modernity rather than tradition to showcase a transformed, contemporary terroir. Try the octopus salad with salicornia and quinoa, granny smith apples, yellow pollack filleted and lightly smoked, with sauce vierge and crushed peas, two-cooked lamb and seasonal vegetables, a mirror dome with dark chocolate ganache and caramel heart... Affable service.
