Sponsored In Royan, Chef Ludovic Vallina and Christelle offer a choice stopover for fish lovers and gourmets alike. In a contemporary Scandinavian cocoon setting, guests come for the refined cuisine as much as for the smiling service. Behind the stoves, the Chef navigates by sight according to arrivals and his inspiration. The result is high-flying dishes and a deliberately limited menu featuring fresh fish sublimated by perfect cooking and delicious pairings: wild turbot with yuzu lemon pearls, roasted scallops and ginger citrus butter, sea bass fillet and creamy rice, sea bream to share, and more if you're so inclined. Starters are also up to scratch, with home-cooked low-temperature foie gras and planks of Iberian charcuterie to whet the appetite. Homemade desserts are well worth the detour, such as vanilla crème brûlée and baba au rhum. In the cellar, you'll find a fine selection of wines from Christelle's region, with Pouilly fumé and Sancerre as guest stars. When the weather's fine, head out onto the terrace for a breathtaking view of the port.
