Sponsored Established on the Carmes site, known as the headquarters of the Michelin company, Benjamin Berodias, trained in the codes of gastronomy by great French chefs, has now returned to his Vietnamese origins. Like a magician, he bewitches all your senses with family recipes learned from his restaurateur parents, who founded the place in 1987. His cuisine is surf and turf, as the emperor of Hué loved it, with specialties from the north and south of the country: fabulous chicken with curry or lime and Thai basil leaves, crispy pork belly, and for a vegan touch, ginger-infused five-flavored caramel tofu. It's a story told with greed and sincerity on beautifully colored plates. The atmosphere is hushed and cocooning, with walls adorned with lanterns, in the image of the river of perfumes that runs through Vietnam.
