Gourmet Restaurant A dazzling career for this young chef, barely 27, who has also worked in the kitchens of L'Arpège and on Top Chef. Victor Blanchet imagines a creative table at the back of a concept store, where his Afro-Haitian roots blend with Basque and Provençal cultures. The dishes reflect a fine balance between terroirs, and a high level of technique in serving them. On the menu: red tuna carpaccio, pastis mayonnaise, herb oil and jalapeño; snacked red mullet, textured potatoes, cuttlefish ink, rouille sauce and bouillabaisse juice; lamb shoulder confit, maquis herbs, barbecue condiment, reduced jus and pencil leeks; dark chocolate namelaka cream, roasted pistachios, pepper chantilly and pear confit.
