Gault&Millau's review 2026

It's a heritage address in the Halles district, founded in 1932 and maintained by the Dumant family, who also own a dozen establishments in the capital. At times, the experience almost resembles a guided tour, recounting the history of Parisian bistros in this period decor. These are beautiful Art Deco elements, the large canopy, the tessellated floor, the Thonet chairs and old framed menus, the chromes, the mirrors and the long banquettes. The cuisine is worthy, with well-executed must-haves and a great wine list (Burgundy, that is). On the menu, poached eggs with morel mushrooms, vol-au-vent with mushrooms, linguine with morel mushrooms, pithiviers of game birds and foie gras, bœuf bourguignon, chicken with yellow wine and morel mushrooms, Norwegian omelette, crème brûlée, profiteroles, baba au rhum..
