A traditional dish prepared by Mexican chef Minerva Casas, in association with Margot Farenc, baker and conductor of this colorful establishment. Their tempting menu proudly assumes a limited number of recipes, as close as possible to a gastronomy that makes gourmets the world over salivate. In a setting typical of fonda, these popular and festive canteens, savor 5 torta recipes, including a veggie one, and their accompaniments. The brioche telera bread, made to an original recipe by an artisan baker, marries perfectly with the black bean purée, high-quality ingredients and juicy meats simmered... slowly.
