Chef's Restaurant A wind of freshness and delicacy sweeps through the bustling eleventh arrondissement, with Cecilia Spurio, a former pastry chef with Guy Savoy and Yannick Alléno, and Eugenio Anfuso, who has worked with Pierre Gagnaire, Pascal Barbot and Bernard Pacaud. They offer French cuisine punctuated by a few Italian touches, with great sensitivity, finesse and talent. Right from the start, this duo offers us a festival of gourmet delights, with a tarte brûlée with 36-month Parmesan and Modena balsamic, gnocchi à la marinière, clams, knife and tangy potato siphon. Among the marvels that follow, a special mention goes to spider crab, grapefruit and fresh almonds in a delicious cappuccino, where everything comes together: iodine, bitterness, chewiness and voluptuousness. Roasted brill is accompanied by a thin slice of Bigorre black pork delicately placed on smoked datterino tomatoes, taggiasche olives and a silky tomato water sauce with beurre blanc, before Challans duck glazed with honey, yellow bell pepper, roasted apricot and a mezcal jus. Cecilia takes up the torch brilliantly with a rhubarb, strawberry, poppy and glazed fountainbleau dessert, a lovely sweet finish. A well-equipped cellar, still developing, with a somewhat meagre choice by the glass.
