Gault&Millau's review 2025

This pretty, pocket-sized address in the heart of the increasingly lively Saint-Cyprien district was opened in summer 2022 by two young associates, Gabriel Lasserre in the dining room (as professional as he is pleasant) and Julien Marsaud in the kitchen (formerly with Constant and Sombardier). And it's been a great success ever since, thanks to a smart seasonal menu with a limited choice (3 starters, 3 main courses, 4 desserts) but frequently renewed. In true bistronomic style, the plates are worth a toque, including white asparagus with coppa and white tandoori sauce, sea bream with fennel salad and smoked wheat, strawberries and artichoke feta, pork belly cooked for 24 hours and then snacked on, and the final tiramisu, for a sequence that's great value for money. The wine list is as tiny as it is sophisticated. Successful post-industrial decor, fine selection of cocktails, whiskies, rums...
