A frank bistro that appeals equally to meat-eaters and gourmets. Veal tripe, black Gascony pork with broccoli and fennel, and pan-fried organic calf's head with porcini mushroom cream and hazelnut Jerusalem artichokes are all on the menu, while the latter prefer sturgeon sashimi and monkfish tail with smoked wheat hummus, chard and chickpeas. And everyone comes together for a chestnut-cream rice pudding and the boss's signature cannon.
