Gourmet Restaurant Families come here for a party, a birthday or simply for the pleasures of the table in a friendly atmosphere. The cuisine of Jean-Bernard Hermann, formerly of Chapel, Gaertner and Haeberlin, asserts his loyalty to the years 1990-2000. It favors sautéed dishes, full-bodied sauces and noble products treated with respect. The dishes reflect a certain sensitivity: peas in three textures around a perfect egg, a meaty pike-perch escorted by natural-flavored vegetables, a quasi veal with Nice accents, spiced up with Parma shavings. Each dish bears witness to a sure hand, even if the sauces, served sparingly and barely legible on some of the black plates, struggle to assert themselves. The dessert, a generous strawberry custard, suffers from a rough texture, but the homemade vanilla ice cream and intense raspberry coulis lift the final note. And we leave with the feeling of having rediscovered a part of yesterday's gastronomic France, still alive and sincere. The emotion is there, supported by a cuisine based on products, an exceptional wine list and a very attractive quality-pleasure-price ratio (menu at €44). It's a place to come back to, not for the glitz, but to savour the continuity.
