Gourmet Restaurant It's a good idea to entrust a Mediterranean creation space to Alan Geaam as part of one of the resort's flagship hotels. The ebullient chef from rue Lauriston (16.5/20 in Paris) puts his energy and imagination into creating surprising dishes based on his Lebanese culture. These include black falafel with smoked eel, octopus lacquered with pomegranate lemon balm, semi-cooked langoustine with vine leaf and kumquat, and lamb kebbeh with porcini mushroom cream and coffee. We're only at the beginning of the adventure, and there's still some fine-tuning to be done to match the desserts created for this theme by Sébastien Vauxion, but the concept has a bright future.
