Chef's Restaurant Just a few meters from Courchevel's altiport, the Annapurna is one of the resort's highest-rise hotels. Overlooking the alpine garden, it offers a magical view of the mountains. It's this setting that undoubtedly won over Jean-Rémi Caillon, who we met a little further down the road at the Kintessence. It's also the story of his meeting with the family of skier Alexis Pinturault, who wanted to involve him in the project to create a gourmet mountain restaurant: l'Alpage. The cuisine is already well established, with a full 6-course menu at €160 and a wide choice à la carte. Each dish features a cereal or vegetable, certainly a tribute to the simplicity of mountain cooking. Chartreux mushrooms, beet belle oréade and Savoy polente seem to have come out of our grandmothers' grimoires. As for the dishes, the bon franquette roots highlight salsify, celery and parsnips. A magnificent walnut and truffle jus enhances the whole. The veal randonneur offers magnificent sweetbreads cooked in melilot with orange and hazelnut. Desserts are on the same crest line: tartifle crézon offers a tasty blend of potato and tart apple. Brewing barley, hops and malt contrast with the citrus of grapefruit. As for the wine list, it needs a real structure, and the selections would benefit from being pruned to focus on the essentials. The dining room and service are still a work in progress. Further refurbishment will undoubtedly give the place a different atmosphere, a welcome setting for promising cuisine.
