Remarkable Restaurant Sources is an exemplary example of a stable, regular three-bedroom, the only one in the heart of the city. Ingrid Deffein and Guillaume Decombat have taken their little house at the entrance to rue de Verdun to the pinnacle without losing their soul. No concessions to the heavy-handedness of gastro tradi as some of our colleagues like to call it, nor to the followers of the urban neo-bistro with its roots and generalized fermentations. It's the breath of freedom that sweeps through the room and the inspired dishes, imbued with simplicity and precision. Lunch menus are €25 (mayo egg, gravlax, fish from the fish market in matelote sauce, mayo knife tartar smoked potatoes...) and dinner €38. These small, virtuous prices limit ambition a little, but the note remains, also for the ambiance and accessibility of the place, the very natural cellar that also favors pleasure and discovery.
