Ingrid Deffein et Guillaume DECOMBAT
Chef : 1 restaurantBefore becoming chefs, Ingrid Deffein and Guillaume Decombat both studied business for her, and logistics and transport for him. "My parents, former restaurateurs, advised me to study in this sector to ensure my future," she explains. With their diplomas in hand, they both enrolled at the Ferrandi school in Paris. Ingrid started out at the George V, while Guillaume completed his apprenticeship at the Bristol. The young chef soon realized that palaces were not for him, and in 2014, he joined Semilla, the restaurant of MOF Éric Trochon. Ingrid, for her part, leaves for Cobéa, alongside Philippe Bélissent.
In 2016, the couple moved to Nantes, where Ingrid is originally from. The duo opened Sources, a grocery-print store. The aim: to offer products sourced directly from regional producers. Two years later, the Nantes grocery store is transformed into a restaurant. By 2020, the couple had won the Grand de Demain Grand Ouest trophy, followed by the national Gault&Millau Jeunes Talents award. Ingrid and Guillaume also feature in the latest edition of 109 - Le Sang neuf de la gastronomie. It's an adrenalin shot," says Guillaume, " and you feel like you can go back for another year.
