Remarkable Restaurant The beautiful historic hotel in the heart of the city is the perfect setting for Georgiana Viou's unique, sunny cuisine, which lights up wherever it goes. Her regularly changing menu features three tiered courses, to be enjoyed on the delightful patio on those balmy Nîmes evenings, full of distinction and pleasure. The marriage of red squid from Grau du Roi with butternut squash is a revelation, as is the green curry and parsley foie gras. The region is always present, so well expressed with the "biou" from the manades and the muge from Grau du Roi for a terre mer disheveled with bottarga and broccoli. A little cheese twist with smoked persimmon and walnut brézain before a pleasant pear tonka lemon balm dessert. This five-course sequence, priced at €110, looks great, with an attentive and involved wait staff, and a regional wine cellar offering all the great references, from Roussillon to Lyon, with a judicious offer by the glass.
