Chef's Restaurant Media-savvy chef Eloi Spinnler can indeed pride himself on having succeeded in his wager, that of a table that puts heart and reason in agreement. While ethical principles guide the meal from starter to cellar, they are almost never mentioned, as if to underline the obviousness of the rules: seasonal dishes and zero waste, for a cuisine that does good while doing good. The chef's ideas are as young as he is, with constructive back-and-forth between childhood memories and tomorrow's ideas, traditions beautifully reworked, playing on cooking and contrasts. Zucchini risotto is spiced up with generous shavings of bottarga and nourished with a Grenoble mousse, while confit lamb melts under the tooth when the salicornia crunch, with effective darphin apples. Dessert comes a little late, but the wait is well worth it, with a gourmet brownie with lemon and sparkling chocolate. The cellar is well-stocked, with ideas for every occasion, from table wines to exceptional wines: Vincent Ricard, domaine Camu, Frédéric Cossard's puligny-montrachet, Henri Magnien's chemins de l'Arkose and aloxe-corton or Philippe Colin's santenay and chassagne-montrachet.
