Chef's Restaurant Sven Chartier, who was one of the new wave agitators of the 2000s in his Saturne, has gone green to the delight of his Parisian friends in their second home in the Perche region. We open the cage to the birds, letting in the sun, the wind, the natural breath of a terroir that just wants to express itself freely. And the chef has kept his hand in simplicity, with beef tartare, Cantabrian anchovies, beet and yuzu, crispy beef cheek with red wine sauce, veal chop for two... It may not be Paris, but for many it's better, right down to the hearty desserts, such as arlette, cherries, almond espuma and lovage ice cream.
